They have been sourcing grapes from two organic vineyard sites in Central Otago and in 2016 they purchased their own farm: a five-hectares vineyard on Mount Pisa, planted with Pinot Noir, Chardonnay, Chenin Blanc, Gamay Noir and Cabernet Franc. Watch this space for the release of their first domaine’s Chenin Blanc. Sato makes elegant, precise wines. He picks early to retain freshness and acidity, and to avoid having fruits that are too ripe. This, and his natural winemaking, are what distinguish him from other winemakers of the region.

ABV: 14.3%

SOILS: Alluvial sandy or silt loam with schist and quartz gravel

FARMING: Sato Pisa Vineyard. No pesticides, herbicides, systemic fungicides or inorganic fertilisers used.

WINEMAKING: Hand picked on 26 & 30 April 2019. 28 hl/ha. Press overnight with basket press. Natural yeast fermentation in oak barrels. 16 months in old French oak barrels. Unfiltered & unfined. No additives except for <20mg/L sulphites before bottling. Bottled 3 September 2020. Aged for a further year in bottle before release.
1561 bottles produced.

TASTING NOTES: Quince, yellow plums, pineapple and citron. Layers of oxidative aromas and honeyed richness. The rich, full- bodied dry palate with high acidity.
